Azienda Agricola Valle dell’Asso, owned by Gino Vallone, is the repository of a long viticultural tradition. Valle dell’Asso’s vineyards sink their roots in the plains of Salento, an ancient wine land with a history traceable back to the Messapic, Greek and Roman civilizations. The plants are vertically trellised with a density of 5000 per hectare; they are between 1 and 35 years old, and are located in the municipalities of Galatina, Cutrofiano, Sogliano Cavour and Salice Salentino. The red varieties planted are Negramaro, Primitivo, Montepulciano d’Abruzzo and Aglianico, while the white varieties are Malvasia di Candia, Fiano di Puglia, Garganega and Chardonnay. Gino began bottling his own wine in 1995; in this new phase the firm hired Elio Minoia - a very experienced oenologist - and was certified as organic. The cellar is in Galatina, in an old building which has been refurbished with modern equipment.
