La Cuccagna was established in 1967. The kitchen is the domain of Martino Marsella, his wife Livia and their daughter in law Paola Ortesta; their son Gianni is the Sommelier, while their daughter Rosanna is Pastry Chef and doubles as Sommelier. Their cuisine is seasonal and centred upon local ingredients; they often reinterpret traditional Apulian dishes.

Rosanna Marsella has been a Sommelier since 2005. She is in charge of the restaurant’s renowned pastry shop, which is characterized by the simplicity, typicity and originality of its creations.
